The Single Best Thing You Can Possibly Buy at Costco This Summer

My role as Kitchn’s resident Costco fanatic is one I take very seriously. When I flash my membership card at the door, I am not only stocking up on staples (and snacks!) for my own family, but I am also keeping a keen eye out for smart buys to share with you. The essentials on my list remain the same year-round, but I always leave space in my cart for items that spark inspiration for seasonal cooking. Which is why I’m kicking off July with a special trip to Costco just to pick up a tub of marinated fresh mozzarella. Here’s why I think you should do the same.

Find it in stores: Galbani Fresh Marinated Mozzarella, $10.99 for 40 ounces

Among the wedges of Parmigiano-Reggiano and wheels of French Brie in Costco’s surprisingly expansive cheese section, you will find 40-ounce tubs of marinated fresh mozzarella. The milky-fresh flavor of mozzarella cheese is mild, making it the perfect canvas to soak up herbs and oil. The marinated mozz is the perfect simple appetizer to serve as you dip your toes back into hosting. Add the cheese and a few spoonfuls of the marinade to a small dish, then surround the bowl with crostini, roasted red peppers, and paper-thin cured meats. If you are not ready for family-style food service yet, slide the antipasto ingredients onto small wooden skewers for people to grab.

Marinated mozzarella’s greatest feat is doing double duty in pasta salads and picnic sandwiches. Brush the cut sides of a baguette with the herb-infused oil, then layer on the mozzarella, sliced vegetables, and grilled or cured meats or tofu. When pasta salad is on the menu, use this recipe as a guide but skip the from-scratch dressing and whisk red wine vinegar with the herb oil in a large bowl. Mix in short pasta cooked al dente and toss with artichoke hearts, olives, onion, cubed hard salami, and the mozzarella.

Don’t stop there: Marinated mozzarella can be added to frittatas, baked into savory bread pudding, and served as a filling poolside snack. In fact, I promise you this tub will be empty before you know it. Maybe buy two?
